Foodcation #10: Survival Edition
"We did it, Joe". We all deserve some ice cream after all the internal (and external) "I-Screams".
2020 defied normalcy yet again with not an election day, but a whole darn week. After the slow dragging burn, it came to a refreshing end yesterday. I was riddled with anxiety and my brain was fried but here I am to see a brighter day! Here’s a brief rundown, in no particular order, of some things that helped me endure the long limbo. I love many of these things like Joe Biden loves his ice cream.
1) Countless Diet Cokes and Dunkin’ cold brews to stay awake for electoral college map refreshing and live election coverage watching
2) Dried Fuyu persimmons from HMart
3) Ted Lasso and more Ted Lasso.
4) Sala Thai Cashew Nut with Chicken over a bed of cauliflower rice
5) Blue Gatorade Zero to cure a lack of sleep and then to celebrate a soon-to-be newly reinstated blue nation (!!!)
6) Going on a 4-6 mile runs daily while listening to The Daily or All Too Well on repeat
7) This mini Snickers bar at 2pm on a Friday (I’m trying to maintain a mostly No-Sugar November but this was a mini exception)
8) Checkout-line impulse buy Mango Apple Jalapeño All Fruit Snacks from Trader Joe’s that were low-key off the charts on the Scoville scale.
9) Staying on the theme of TJ, air-fried Cauli Gnocchi and Turkey Meatballs in homemade tomato chili sauce
10) Two cough drops and a tall mug of peppermint tea
11) Checking in with my fam and how they’re stress eating this homemade Kung Pao Shrimp
12) Scrolling through Diane Chang’s (@eatingpopos) gorgeous naturally flavored and decorated cakes that are all forms of visual soothing and therapy if you ask me.
13) Many bits of frozen mango chunks dossed in Tajin.
14) A SoCal Bareburger I meant to order with a lettuce bun but ultimately was prepared and packaged for me with no brioche bun, no lettuce bun, no avocado. Just scant pieces of pickled onion on a turkey burger patty with a thin layer of cheese. It’s fine, I’m fine. I live to forget it because it was only $3.25 using some credit I had. It was still good with some air fried Murasaki wedges on the side.
15) Bonus survival tool: It’s a blessing in disguise that I didn’t reach Tina Fey Sheetcaking territory this week but hey if that’s what you did, no judgment from me what. so. ever.
